Ingredients

  • 8 large fresh jalapeños
  • 8 oz (226g) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup Panko breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Carefully cut each jalapeño in half lengthwise. Use a spoon to remove the seeds and white membranes. Be careful not to touch your eyes after handling jalapeños.
  3. In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, cilantro (if using), garlic powder, salt, and pepper. Mix until well combined.
  4. Fill each jalapeño half generously with the cheese mixture.
  5. Set up a breading station: Place flour in one small bowl, beaten egg in another, and Panko breadcrumbs in a third.
  6. Dip each filled jalapeño half first into the flour, shaking off excess. Then dip into the egg, letting extra drip off. Finally, coat thoroughly with Panko breadcrumbs.
  7. Place the breaded jalapeño bites on the prepared baking sheet. Drizzle lightly with olive oil.
  8. Bake for 18-22 minutes, or until the jalapeños are tender and the breading is golden brown and crispy.
