Ingredients
  

  • Two tablespoons of extra-virgin olive oil.
  • Four cloves of fresh garlic minced finely.
  • Two tablespoons of cumin seeds toasted well.
  • One and a half tablespoons of coriander seeds.
  • One tablespoon of fresh lemon juice.
  • Half a cup of quality vegan mayonnaise.
  • One teaspoon of rich smoked paprika.
  • Half a teaspoon of hot chili flakes.

  • Mixing bowl to blend the sauce ingredients together.

Method
 

  1. Step 1. Place a dry skillet over medium heat. Add your cumin and coriander seeds. Toast them gently for three minutes until fragrant. Remove the skillet from the heat immediately.
  2. Step 2. Let the toasted spices cool down briefly. Grind them thoroughly using your mortar and pestle. You want to achieve a very fine powder.
  3. Step 3. Grab your main mixing bowl. Add the extra-virgin olive oil and vegan mayonnaise. Whisk them together until completely smooth and glossy.
  4. Step 4. Stir the minced garlic and lemon juice. Add your ground spices and smoked paprika. Sprinkle in the hot chili flakes for heat.
  5. Step 5. Mix everything together vigorously. Ensure all the unique ingredients blend perfectly. Check the consistency of your sauce carefully. Add a tiny splash of water if needed.
  6. Step 6. Cover the mixing bowl securely. Let the sauce rest in the refrigerator for thirty minutes. This resting period allows the complex flavors to deepen.
  7. Step 7. Transfer the finished sauce into an airtight glass jar. Store it safely in your refrigerator. Stir it quickly before serving to your family.
