GAPS Cream Cheese Dessert Recipe (No-Bake, Grain-Free & Creamy)

This is an incredibly easy and delicious no-bake GAPS diet dessert. This refined sugar-free and gut-healing treat utilizes 24-hour cultured cream cheese to deliver a flawless cheesecake-like texture.

Ingredients
  

  • 2 cups 24-hour cultured yogurt cream cheese must be at room temperature
  • 1/2 cup raw honey or your preferred GAPS-approved natural sweetener
  • 1 tablespoon alcohol-free pure vanilla extract
  • 1 tablespoon grass-fed gelatin unflavored
  • 1/4 cup cold water
  • 1/2 cup heavy cream substitute coconut cream for a dairy-free option
  • 1 cup fresh or frozen berries for topping

Method
 

  1. Step 1: Pour the cold water into a small bowl. Sprinkle the grass-fed gelatin over the top and let it sit for 5 minutes so it can bloom properly.
  2. Step 2: Dissolve the bloomed gelatin over very low heat. Make sure you do not let it boil. Set it aside to cool slightly after it dissolves.
  3. Step 3: Scoop your room temperature 24-hour cultured cream cheese into a large mixing bowl. Add the raw honey and pure vanilla extract directly to the bowl.
  4. Step 4: Use your hand mixer to beat the mixture thoroughly. Keep beating until it develops a silky smooth and beautifully creamy texture.
  5. Step 5: Slowly pour the cooled gelatin into the cream cheese mixture while continuously mixing to ensure absolutely no lumps form.
  6. Step 6: Whip the heavy cream or coconut cream alternative in a separate bowl until stiff peaks form.
  7. Step 7: Gently fold the whipped cream into the cream cheese mixture using a spatula. Be careful not to mix too vigorously so you maintain the air and keep the dessert perfectly fluffy.
  8. Step 8: Pour the prepared creamy mixture into your springform pan or divide it evenly among individual serving jars to set.
  9. Step 9: Place the pan or jars in the refrigerator for at least 4 hours so the dessert can chill completely and set firm.
  10. Step 10: Add your favorite chilled berry topping using fresh or frozen berries right before serving and enjoy this healthy gut-healing treat.

Notes

1: Always ensure your 24 hour cultured yogurt cream cheese is at room temperature before mixing. Cold cream cheese will cause lumps in your dessert. Room temperature ingredients guarantee a silky smooth texture.
2: You can safely store this GAPS approved dessert in the fridge for up to 5 days. Keep it covered tightly. This makes it a perfect make ahead dessert recipe for busy weeks.
3: This treat is a completely freezer friendly dessert. You can freeze individual jars for up to three months. Simply thaw them in the fridge overnight before eating.
4: Be very careful not to boil the gelatin when melting it over the stove. Boiling will destroy the amino acids from gelatin. It will also prevent your no-bake cheesecake style dessert from setting properly.
5: If you need a dairy free option, simply swap the heavy cream. You can use a high-quality coconut cream substitute instead. It will still whip up nicely for a creamy and fluffy dessert.
